Tomato sandwich with aioli mayo by Promise of Peace Gardens Founder Elizabeth Dry

TYLER, Texas (KLTV) - We had a special guest, Elizabeth Dry, founder of the Promise of Peace Gardens at the Mineola Nature Preserve. She made a delicious tomato sandwich with aioli mayo and told us about a great event happening at MNP on Saturday, July 13.

Tomato Sandwich with Aioli Mayo

Ingredients:

· 1 c. garlic aioli

· 2 Tbsp. chopped fresh basil leaves

· 12 Slices of white or wheat bread

· 2 lb. heirloom tomatoes

· Kosher salt, to taste

· Freshly ground black pepper, to taste

Directions:

1. In a medium bowl, combine the garlic aioli with the basil. Spread the mixture on one side of all the bread slices (there may be some leftover spread).

2. Slice the tomatoes into 1/4-inch slices. Place the slices on the aioli side of bread, overlapping as necessary. Season the tomatoes with salt and pepper.

3. Serve immediately.

Garlic Aioli Recipe:

Ingredients

· ¾ cup mayonnaise

· 3 cloves garlic, minced

· 2 ½ tablespoons lemon juice

· ¾ teaspoon salt

· ½ teaspoon ground black pepper

Directions

1. Gather your ingredients.

2. Mix mayonnaise, garlic, lemon juice, salt, and pepper in a bowl.

3. Cover and refrigerate for at least 30 minutes.

Aioli should cover the back of spoon when dipped into the aioli.

You can also add arugula, radishes, or micro greens to your sandwich!
