Double Chocolate Pudding by Mama Steph

(KLTV/KTRE) - This recipe is an easy one to whip up to share with someone you love! It uses just a few ingredients: milk, cream, sugar, cocoa powder, chocolate, and a couple other items most of us have in our pantry. The outcome is fabulous!

Double-chocolate velvet pudding by Mama Steph

Ingredients:

1 1/4 cup (7 ounces, by weight) dark chocolate chips (60 to 70% cacao)
2 cups whole milk, divided
1 cup heavy cream
a generous 3/4 cup granulated sugar
1/4 cup cocoa powder
1/4 teaspoon salt
1/4 cup cornstarch 
1/2 stick butter
3/4 teaspoon vanilla extract

Method:

In a large saucepan, combine chocolate chips, 1 3/4 cups of the milk, the cream, sugar, cocoa powder and salt. Set over medium heat, and stir continually until the chocolate melts into the milk. It will thicken and get smooth and shiny.

Next, combine the remaining milk and the cornstarch in a bowl, and whisk together until completely smooth. Then add the mixture to the pudding, and continue to whisk as it further thickens, about one minute. Use a spatula to scrape down the sides of the pan. 

Finally add the butter and vanilla, and whisk in until smooth.

Serve topped with caramel sauce, whipped cream, or as-is.
