Deconstructed Texas Caviar with Carmen Sosa

Carmen Sosa of the East Texas Community Food Coalition shares this recipe for a new twist on Texas Caviar, using ingredients all fresh from the Tyler Library Farmers Market!
Deconstructed Texas Caviar
1 mess of fresh peas (purple hull, black eyes, cream, zippers, etc.)
Simmer peas for two hours with just enough water to cover, and lots of chopped garlic. Drain and cool.
On a platter, arrange all ingredients in a bullseye pattern, from outside to inside.
1. Sliced vine-ripened local tomatoes
2. Sweet yellow onions
3. Sweet peppers (red, yellow, orange)
4. Peas
5. jalapenos, thinly sliced garlic, and coarsely chopped cilantro
Drizzle with Texas olive oil and red wine vinegar.
Top with sea salt and freshly ground pepper.
