Cajun Fried Turkey

Turkey (14 pounds or less)

Olive oil

Turkey fryer

Fryer oil (peanut oil if no allergies)

Blackening seasoning

Hot sauce

Turkey injector

While the bird is incased in the wrapper place the bird into your fryer and cover with water until the turkey is just covered. Remove the bird and mark the water line, this is your grease fill level. (Be sure to completely dry out your fryer before pouring in the oil) Inject your turkey with hot sauce while in the wrapper. Let sit for at least 2 hours. Then unwrap and hit with pat with paper towel to remove excess moisture. Next coast with olive oil and then generously sprinkle blackening seasoning over the bird. Rub the seasoning over the entire bird. Heat your oil to 350 degrees and then drop the bird into the grease for 3 and half minutes for every pound. (Make sure the turkey is completely thawed before frying. If not the great will boil over and could start a major fire)
