Smoked veggie quesadillas from Cooking Up A Storm with Grant

Sliced Onions

Sliced Mushrooms

1 small can of diced green chilies

Baby spinach

Large burrito size tortillas

Liquid smoke

Mozzarella Cheese

In a skillet sauté your onions and mushrooms for about 8 minutes.  Add the green chilies and a tablespoon of liquid smoke. About two minutes into the sauté.  After 8 minutes add your spinach and cook for an additional minute.  While this mixture is cooking, on a griddle heat two flour tortillas.  Cover one tortilla with shredded mozzarella cheese.  Place your veggie mixture over the cheese and cover with the second tortilla.  Cut into sections and enjoy.
