ATHENS, TX (KLTV) - Willa Johnson owns The Soul Kitchen in Athens, Texas, but she doesn’t live there.
“My typical day starts at two a.m. coming out of Fort Worth,” said Johnson. “I travel to Athens daily.”
Johnson began cooking in Athens more than 10 years ago as part of a state-funded program to feed kids during the summer months, but has since gone out on her own.
“A lot of rules changed,” said Johnson. “I stepped out on faith and started asking for donations because I didn’t want to desert the kids in Athens, because I’ve been feeding them so long.”
Johnson now takes her food truck to different locations to sell her food. This is how she raises the funds to feed the kids during the summer.
“I thought it was nice of Henderson County to reach out and allow me to come out and do this for the children of Athens,” said Johnson.
Platinum Cottages in Malakoff is a frequent customer of the food truck.
“She approached us about a year ago,” said Brian Chesley, general manager of Platinum Cottages. “It seemed like a good cause and it helps us and helps her at the same time.”
Johnson said her food is so good because she cooks from her heart.
“I love to cook,” said Johnson. “I cook with a lot of sugar, a lot of butter and a lot of love, love, love.”
Johnson said she hopes to, one day, feed kids all over Henderson County.
