BOURBON BALLS
1 c vanilla wafer cookies, crushed
1 c pecans, finely chopped
1 ½ c powdered confectioner's sugar
2 T baker's cocoa
2 ounces Kentucky bourbon
1 ½ T corn syrup
Mix together dry ingredients, reserving ½ c of confectioner's sugar. In a separate bowl, blend bourbon and corn syrup. Combine wet and dry liquids until well blended. Cover and chill for 2 hours.
Spread remaining ½ cup of sugar into cookie sheet. Shape dough into balls and roll in sugar. Store in airtight container.
These also work well with spiced rum.
