Low-carb breakfast casserole with Cooking Up a Storm's Grant

8 eggs

1 tsp Parsley

1 tsp Garlic Powder

1 tsp Seasoning Salt

4 tbl Sour Cream

3 tbl Shredded Parmesan Cheese

¼ Cup Heavy Whipping Cream

1 lb Sausage

1 lb Bacon

1 Diced Onion

1 Diced Green Pepper

4 oz of Shredded Pepper Jack Cheese

4 oz of shredded Colby Jack

2 tbl of Melted Butter.

In a mixing bowl place eggs, sour cream, Parmesan cheese, heavy whipping cream, parsley, garlic, melted butter, and seasoning salt and mix thoroughly. 

In a large casserole layer cooked sausage, sautéed peppers and onions, cooked bacon, and 4oz of pepper jack cheese.  Next pour the egg mixture on top and cover everything with 4 oz of shredded Colby jack cheese.  Place in a pre-heated 350 degree oven.  Cook for 45 minutes(if your casserole dish is very large the mixture maybe thin, if so check after 30 minutes).
