Low-carb buffalo chicken strips from Cooking Up a Storm's Grant


6oz of Finely Ground Pork Rinds
2Tbl of Parsley Flakes
1Tbl of Garlic Powder
1Tbl of Seasoning Salt
2.5 lbs Bag of Boneless, Skinless Chicken Tenders
1 Gal of Vegetable Oil
3 Eggs
¼ Cup of Water
Your Choice of Wing Sauce
Ranch/Bleu Cheese

In a bowl mix 3 eggs with the water to make your egg wash. In a separate bowl mix 6oz of ground pork rinds, parsley, garlic powder, and seasoning salt for the chicken breading.

In a heavy pot warm your vegetable oil to 350°. Place chicken strips in the egg wash and then lightly cover in the pork rind breading. Place breaded chicken in the vegetable oil for 6 minutes. Once cooked, set on a plate with a paper towel to drain excess grease. Then toss your cooked tenders in a bowl with you wing sauce and enjoy.

The total carb count per strip is around 1 gram. Different wing sauces have different carb counts so be sure to read the label.
