Dudley's Crawfish Fetucini
Ingredients:
| 2 teaspoons of seasoning mix (See below) |
| 1 stick of butter |
| 1 cup chopped yellow onion |
| 4 minced cloves garlic |
| 1/2 cup chopped celery |
| 1 pound crawfish tales (peeled) |
| 1-10 ounce can of cream of mushroom soup |
| 1-8 ounce carton of sour cream |
| 8 ounces of Velveeta cheese |
| 1-8 ounce package of fettuccini, boiled and drained |
| Grated parmesan cheese |
Melt butter in a large pot and saute' onions, celery and garlic for five minutes or until tender.
Add crawfish, soup, sour cream, Velveeta cheese and 2 teaspoons of the seasoning mix. Simmer until bubbly.
Add cooked noodles, mixing well. Pour the mixture into a 2 quart casserole dish. Top with grated parmesan cheese and bake, uncovered, at 350 degrees until heated through. (About 25 minutes)
Seasoning Mix:
| 1 teaspoon salt |
| 1 teaspoon cayenne pepper |
| 1 teaspoon fine ground black pepper |
