Texas Trust Black Eyed Burrito with PEAco De Gallo

8 cups cooked and drained Black Eyed Peas (4 cans drained)
1 lb ground round
1 package of your favorite taco seasoning
2 onions chopped
2 tomatoes chopped
2 cups shredded lettuce
1 cup sour cream
2 cups grated cheese
3 fresh jalapeño peppers
12 large flour tortillas
Brown ground round with 1 chopped onion and drain, add 6 cups (3 cans) drained Black Eyed Peas. Mash peas into meat mixture to a refried pea consistency, allowing a few peas to remain whole. Add your favorite taco seasoning. Cook until done.
Chop 2 tomatoes, 1 onion, 3 fresh jalapeño peppers, and 2 cups drained peas. Place in bowl. You have just made PEAco De Gayo! Use to garnish your Black Eyed Burrito.
Warm the flour tortillas. Fill each tortilla with meat mixture, grated cheese, sour cream, chopped onion, chopped tomato, shredded lettuce, and your favorite salsa. Wrap tortillas in burrito form, and garnish with PEAco De Gallo. Enjoy!!
