Ceviche Cozumel Supreme

1/2 lb. skinned red snapper or tilapia filet

1/2 lb small shrimp

1/2 cup lime juice

4-6 drained pickeled jalapenos

2 medium tomatoes, seeded and drained

1/4 cup of olive oil

1/2 tsp. dried Mexican oregano

1/2 tsp. sea salt

1/2 tsp. ground black pepper

Lime wedges

1 avocado, sliced

Leafy lettuce for lining dish

 

Cube the fish filet and place in bowl with shrimp. Pour lime juice over the fish and shimp. Cover the bowl with plastic wrap and refrigerate overnight or at least five hours. Chop halapemos and add them to the fish and shrimp along wtih tomatoes, oil and seasonings. Toss well and drain.  Serve with avocado and lime wedges.
