Bugs, Rodents, And Other Problems Plague East Texas Restaurants

      Unsanitary conditions, and evidence of roach and rodent infestations,  were just some of the violations found in the latest inspections of East Texas restaurants. Pizza Hut at 1906 East Marshall in Longview was inspected August 3rd.  There was improper cooling of cooked and prepared foods. Foods were not held to the required cold temperature of 41 degrees. Improper hygienic practices were noted. There was improper handling of ready to eat foods. Total demerits: 25

    Big Dave's Bar-B-Que at 3012 West Marshall in Longview was inspected August 3rd. There were improper cooling of cooked or prepared foods. There were problems with cold temperature holding, and also with foods not held hot enough. There were flies also seen in the restaurant. Toxic items were improperly labeled or stored and food contact surfaces needed cleaning. Total demerits: 24

    Sonic at 1400 South High Street in Longview was inspected July 31st.  There were problems with cold temperature holding and also with foods not held hot enough. The inspector noted cross-contamination of foods and there was evidence of insect contamination. Total demerits: 22

      Mazzio's Pizza at 2605 East Fifth Street in Tyler was inspected July 26th. Cooked pasta noodles had not been cooled down fast enough for storage. Workers were seen by the inspector not washing their hands properly. It was a repeat violation.   There was no soap, and the kitchen area had no hand sink  for workers to wash their hands. There is a large roach infestation. More than 20 live roaches were seen, under the dish machine, and running on racks and floors and rodent droppings were found in cabinets at the front counter.    Pizza pans were caked with food, a dough mixer had dried food debris.   Equipment and utensils needed thorough cleaning. Total demerits: 27
