Serves 4
Marinade
1 Cup Soy Sauce
Juice and Zest of two(2) Oranges
3 TBLS Brown Sugar
4 Cloves Garlic (peeled & left whole)
1 TBL Fresh Ginger (finely chopped)
1 TBLS White Sesame Seeds
4 Skinless Salmon Fillets (Center Cut preferred)
Combine first five(5) ingredients in a medium sauce pan and bring to a boil and then back to a simmer. Cook until syrupy - approximately 15 minutes. Remove from heat and let cool. Add Sesame Seeds.
Transfer fish and sauce to a large(1 gallon) reclosable plastic storage bag and place in refrigerator for 1 hour.
To cook Salmon:
Remove Salmon from marinade and let drip dry.
Place 1 Cup Sesame Seeds in shallow pan and press presentation side of Salmon into seeds.
Heat frying pan over medium heat; add 2 TBL oil.
Take fish and place seed side down in pan - Cook until light brown and crispy.
Flip over and cook other side for 30 to 60 seconds, depending on how well cooked you like your salmon.
Presentation:
Try Wasabi Mashed Potatoes mounded in center of plate; put salmon on top and drizzle with Chinese Sweet Chili Sauce.
