Diabetic Candied Yams

3 Medium yams (1 1/2 cups cubed)

1/4 cup Brown sugar                                                                

1 tsp All purpose flour

1/4 tsp Cinnamon powder

1/4 tsp Ground nutmeg

1/4 tsp Orange peel (zest or rind of fresh orange)

1/2 tsp  Fresh grated ginger root (optional)         

1 tsp Olive, canola or peanut oil

1/2 cup Unsweetened orange juice

Cut yams in half and boil until tender but firm (about 20 minutes).

When cool, peel and slice into 1/4 inch thick slices.

Combine sugar, flour, salt, cinnamon, nutmeg and grated orange peel.

Place half the sliced yams in a medium sized casserole dish.

Sprinkle with spiced sugar mixture.

Dot with half the margarine.

Add a second layer of yams and the rest of the ingredients in the same order as above.

Pour orange juice evenly over yams.

Bake uncovered in a preheated 350° oven for about 20 minutes,

Makes 3 servings- serving size 1/2 cup
