In The Kitchen: Gourmet Vegetable Pizza

Preheat oven to 425 degrees.

1 Boboli type pizza crust

1 14 oz. can artichoke hearts

½ c. mayonnaise

1 clove garlic                         can omit garlic

2 TBS. olive oil

1 red and one yellow bell pepper, seeded and sliced

1 cup sliced mushrooms

2 diced cloves garlic

salt and pepper                       can use other vegetables such as tomatoes, spinach, broccoli

½ c. garlic and herb Feta cheese

¼ c. parmesan cheese             my addition

1-2 TBS. capers, drained       or black olives

In food processor mince 1 clove garlic. Add drained artichoke hearts and mayonnaise. Process until smooth. Spread evenly over pizza crust.

Saute the peppers, mushrooms and the remaining minced garlic in olive oil until slightly tender. Salt and pepper to taste. Spread on top of artichoke mixture.

Sprinkle cheeses and capers over pizza and bake for 15 minutes.
