In the Kitchen: Black-Eyed Pea Recipes

Pea-Licious Pie

1st layer- 1 1/2 cups flour    1 cup melted butter

               1 cup chopped pecans

Combine flour, butter and pecans. Press mixture into a 9x13 baking dish, bake for 20 minutes at 350 degress or until golden brown. Set aside to cool

2nd layer- 1-8 oz pkg cream cheese (softened)

               2 cups Black-eyed peas ( drained & mashed)

               1 cup powdered sugar

                1 cup Cool Whip

Mash peas until completley soft,(may use food processor). combine with cream cheese, sugar and cool whip. Blend all ingredients together well. Pour mixture over cooled crust.

3rd layer.-1-family sized pkg. vanilla instant pudding

               1 tsp. almond extract

Prepare pudding by package directions using 1/2 cup less milk,add almond extract, mix well and pour over layer 2.

Top with cool whip and pecans.


Black Eyed Pea Tomato Aspic

2 cups pickled black eyed peas ( Texas caviar)

prepared 2 days in advance

4 cups tomato/vegetable juice

3 envelopes unflavored gelatin

1 tsp Tabasaco Sauce

2 T minced basil

2 T minced onion

1 cup finely chopped celery

3 T lemon juice

salt and pepper

Texas Caviar

2 cups blackeyed peas drained 1/2 cup wine vinegar 1/2 cup salad oil 1/2 cup minced onion season to taste Last about 2 weeks. (Refrigerated of course)
