Fire Roasted Vegetable Quesadillas:
Roast Vegetables on Grill and chop into 1/4 inch pieces
Vegetables:
Zucchini Squash
Mushrooms
Cilantro
Red Bell Pepper
Onion
(Add Fajita Chicken or Steak, if desired)
Season with salt, lemon pepper. Grill on a flat griddle with butter until outside is browning and cheese is thoroughly melted. Serve in wedges with fresh salsas, sour cream and guacamole.
