Super Bowl Sausage Stars

(Go Cowboys!)

Ingredients:

1 lb. cooked crumbled sausage

1 ½ cups grated sharp cheddar cheese

1 ½ cups grated Monterrey Jack cheese

1 cup prepared Hidden Valley original ranch salad dressing

(make the dressing yourself with the dressing packet, milk and mayonnaise)

2 cloves of garlic, minced

½ cup finely chopped red peppers

Wonton wrappers (Eggroll wrappers may be substituted and quartered. These are usually found in the produce department.)

Cooking spray

Directions:

Press wonton wrappers into a mini-muffin pan, allowing the corners to flare out like a star. Spray with cooking spray and bake at 350 for 4-5 minutes, just until golden. Remove stars from muffin pan and place on cookie sheet.

Combine cooked, crumbled sausage, cheeses, ranch, garlic and red pepper. Fill each star with approximately one tablespoon of mixture and bake for 5 more minutes, or until cheese is bubbly. Makes about 5 dozen.

Note: Great make ahead recipe. Bake stars and sausage mixture a day ahead, keep separately. When ready to serve, just fill and bake. 

 

Super Easy Caramel Corn

(Takes an hour, but well worth it!)

Ingredients:

15 cups popped popcorn (any kind microwave; butter, light, kettle, etc.)

1 cup brown sugar, packed

½ cup butter

¼ cup light corn syrup

½ teaspoon salt

½ teaspoon baking soda

Directions:

Divide the popcorn between 9x13 pans. In a saucepan over medium-high heat, combine the brown sugar, butter, corn syrup and salt. Stirring constantly, heat until simmering. Cook an additional 5 minutes, stirring occasionally. Remove from heat and stir in the baking soda. Pour over popcorn, stirring well until evenly coated. Bake at 200 for an hour, stirring every 15 minutes.

 

Super Fudgy Brownies

(Easy, starts with a box!)

Your favorite boxed brownie mix

3 or 4 full-size Hershey’s chocolate bars

Prepare brownie mix according to package instructions. Pour half the batter into greased, 9-inch square pan. Layer with chocolate bars. Pour remaining mix over chocolate bars. Bake as directed, checking 5 minutes before required time to avoid over baking. Allow to cool, then cut into bite-size squares.

 

"Don't Be Crabby If Your Team Is Losing" Crab Triangles

(Make and freeze ahead)

Ingredients:

½ cup butter, softened

1 (5oz.) jar sharp processed cheese spread (like Kraft Old English)

1 ½ teaspoon mayonnaise

8 ounces fresh lump crabmeat (quality canned crabmeat may be substituted)

½ teaspoon garlic powder

½ teaspoon salt

6 English muffins, split

Directions:

Combine butter, cheese spread and mayonnaise. Mix in remaining ingredients to make a spread. (If using canned crabmeat, rinse lightly in cold water first.) Place a heaping tablespoon on each English muffin half and spread. Place muffins on a cookie sheet and freeze for about 10 minutes. Remove from freezer and cut into quarters. Bag and freeze to use later or bake at 350 15-20 minutes or until golden brown. Makes 48 triangles.
