One Big Table is a national cooking competition aimed at fighting hunger. It's put on by the Nation's Food Bank Network. The competition is down to just 12 cooks, and one is from East Texas. Delores Griffin of Nacogdoches was at the East Texas Food Bank this afternoon feeding the board her famous Meat Pies. On November 1st, she will compete in Chicago for the title of Best Home Cook. If she wins she'll get a $5,000 commercial sized stove and the title of best amateur cook in America.
"It's an old family recipe," said Griffin. "My mom had it years ago and we all enjoyed it when we were at home, and I've made it ever since I've been married for 50 years, so that's where it originated." You can try Delores' Meat Pies yourself. Below you will find her recipe.
Natchitoches Meat Pies:
1-1/2 pounds of pork - cook uses Owens Country Sausage - mild
1-1/2 pounds beef - cook uses ground chuck
1 tsp. salt
1/2 tsp. red pepper
1 T. baking powder
1-1/2 T. Flour
2 medium white onions, chopped fine
4 buttons garlic
2 T. cold water
1 cup chopped shallot tops (about 2 bunches)
Cook all of the above until done and drain meat well.
4 cups flour, un-sifted
2 tsp. baking powder
1/2 tsp. salt
1/2 cup shortening, melted
3/4 cup milk
2 whole eggs, beaten
Use a coffee cup saucer to cut out pies.
Fill and fry in deep fat. Cook uses Crisco to fry.
Makes about 2 dozen.
