(KLTV/KTRE) - Robbie Shoults, owner of Bear Creek Smokehouse in Marshall, shares a delicious Southern twist on pizza; they're easy to make and would make great appetizers or after-school snacks, too.

Tomato-basil mini-pizzas by Bear Creek Smokehouse

Ingredients

10 buttermilk biscuits 1 1/2 cups Italian cheese blend 1 cup mayonnaise 10 tomato slices fresh grated Parmesan cheese Italian seasoning olive oil spray chopped fresh basil

Spray cookie sheet with olive oil. Flatten each biscuit by hand and space evenly apart on cookie sheet. Spray each biscuit with olive oil. Place a tomato on each biscuit. Sprinkle with Italian seasoning. Mix Italian cheese with the mayo. Put about a teaspoon on on top of each tomato. Top with fresh Parmesan cheese. Bake at 350 degrees for 10-12 minutes or until biscuits are done and golden brown. When removed from the oven, garnish each pizza with some chopped fresh basil. Makes ten servings.
