Happy St. Patrick's Day!
Here's an easy recipe that's a little Texan, a little Irish, and a lot of fun to make.
Corned beef quesadillas
fresh flour tortillas
thinly-sliced deli corned beef
sliced Swiss or Havarti cheese
Thousand Island dressing
Butter one side of a tortilla; place it butter-side down in a skillet over medium-high heat.
Place a slice of cheese down on the tortilla, then about a tablespoon of sauerkraut, then top that with several slices of corned beef.
Top the beef with another slice of cheese, and another buttered tortilla.
When the bottom tortilla is golden brown, carefully flip the quesadilla over, and heat the other side.
When the cheese is melted and both sides are golden, slide out of skillet and onto a plate.
Slice into triangles with a serrated knife.
Serve with a small bowl of the dressing to dip into. Enjoy!
