This easy meal is a quick one to put together! In under 15 minutes you can have it put together and have it on the table.
Springtime pasta with asparagus, ham and Parmesan
4-5 cups cooked pasta, such as rotini, rigatoni, shells, or corkscrews
1 cup chopped fresh asparagus
1 tablespoon olive oil
15 ounce can diced tomatoes
8 ounce package pre-cooked diced ham
1/2 teaspoon red pepper flakes
1 teaspoon Italian seasoning
2 teaspoons dried parsley or 1/4 cup chopped fresh parsley
1/2 cup grated Parmesan cheese
1 teaspoon minced garlic
In a Dutch oven or other large pot, saute the chopped asparagus in the olive oil until tender, about five minutes.
Add the ham, herbs and spices, garlic, and tomatoes. Allow to come to a simmer, stirring occasionally, then add the cooked pasta.
Allow to heat completely through for several minutes, the serve in bowls, topped with Parmesan. Enjoy!
