2 - 3 large tomatoes – cut in chunks
½ large white onion – cut in large pieces
½ Red or orange bell pepper (I use green when Red are too expensive!)
1 ripe Mango – sliced off seed 3 garlic cloves (either minced well or pressed)
1 –2 Hot Jalapeno, chopped well (more if not hot enough)
½ cup cilantro – chopped
1 Tablespoon ground cumin
2 tsp. Salt
1 tsp. Black pepper In processor:
Start with onion, bell pepper, garlic, and tomatoes and process until ingredients are chopped to small pieces. Add mango and remaining ingredients except cilantro. Process to chunky consistency and then add cilantro and process only a second or two longer. Taste and make sure there is enough salt, pepper, etc.
Variations: May add any other fruit, such as peach, watermelon, strawberries, etc.
