Cinnamon-apple bread and a Mother's Day chat with Mama Steph and sons

(KLTV/KTRE) - Here's a recipe that is easy enough to make that you could enjoy it any day, but it's so delicious that it is gift-worthy! Make some for mom on her special day, and treat her to breakfast in bed!

1 cup oil

3 eggs

2 c sugar

2 teaspoons vanilla

3-4 cups diced apples  (about three big apples, no need to peel.)

3 cups plain flour

2 teaspoons of cinnamon

1 teaspoon baking soda

1 teaspoon salt

1 cup  of chopped nuts, optional

Mix flour, baking soda and salt together in a mixing bowl, and set aside.

In mixer bowl, cream together oil, eggs, sugar, and vanilla.  Mix for a couple of minutes, until it lightens in color and looks whipped.

Add flour mixture and cinnamon to the wet ingredients. Stir with spatula a minute or two, until most of the flour is absorbed; switch to mixer finish mixing when dough gets too stiff to mix well by hand.

Add in chopped apples, mixing by hand or with mixer until they are incorporated in the thick batter.

Scoop the batter into two greased and floured loaf pans, or three disposable aluminum loaf pans.

Bake in two loaf pans or 3 foil pans for 1- ½ hours at 300 degrees. Bread is ready when toothpick inserted into center of loaf comes out clean.
