Mama Steph's Boxty with white cheddar and bacon
1 cup raw, grated potato, drained in a strainer or squeezed in clean dishcloth to remove excess moisture
1 cup mashed potatoes
1 cup plain flour
1 teaspoons baking powder
2 teaspoons salt
2 eggs, lightly beaten
1/4 to 1/3 cup milk, to help thin, if needed
1 cup grated white cheddar
6 ounces bacon, pan fried, drained, and crumbled
butter for frying
1. While potatoes are being drained in strainer, whisk together flour, baking powder, and salt. Set aside.
2. Place drained potatoes, mashed potatoes, eggs, cheese, and flour mixture in medium mixing bowl.
3, Add enough milk to make a batter, stirring just enough to ensure no clumps of flour are left.
4. Heat a large skillet over medium heat. Add butter, and allow to melt, swirling to cover bottom of pan.
5. Drop the batter by heaping tablespoons into the hot pan, then sprinkle each with some of the chopped bacon. Cook until golden brown, about four minutes per side.
If making a large number, keep the ones that are ready on a non-stick cookie sheet in a 200 degree oven temporarily until you're finished cooking all the batter.
Serve with butter, topped with chopped green onions, if desired They're wonderful for breakfast in place of hash browns, as well.
