Oscar appetizer: Ancho-chicken wonton cups by Mama Steph

If you're looking for an Oscar-worthy appetizer to share with your family or friends, these easy-to-create appetizers might be just what you need!

Ancho-chicken wonton cups by Mama Steph 

Ingredients:

24 wonton wrappers (typically found in your grocery store's produce section)
1 cup shredded Mexican blend or cheddar cheese
1/2 teaspoon ancho chili powder (or use chipotle powder)
2/3 cup chopped roasted red bell peppers (from jar is fine)
1 cup chunky salsa
1/2 cup chopped green onions
1 cup chopped, cooked chicken (like rotisserie chicken breast)
 

Method:

Preheat oven to 350 degrees. Spray a mini-muffin tin with cooking spray. 
Place a wonton wrapper square in each hole of the muffin tin, pressing against the sides to make the overlapping pieces of the dough pressed together.

Bake for 7 minutes, then remove from oven to fill. 

In a medium mixing bowl, combine all remaining ingredients except cheese. Stir well to combine. 

Put a generous pinch of the shredded cheese into each wonton cup. Then top with a generous amount of the chicken filling. Top with another pinch of the cheese.

Bake for about five more minutes, or until everything is heated through and the wontons are crispy. Serve on a pretty platter and enjoy!
