Need a protein-packed breakfast on the go? Here's an idea that will keep you full and thinking at your best with protein, a touch of veggies for nutrients, and a bit of cheese to give it a gooey-ness that everyone will love!

Light and fluffy egg muffins with turkey and veggies
6 eggs, cracked into a medium bowl and whisked
1/4 cup of milk, whisked into the eggs
1/2 teaspoon each salt and pepper
1/2 teaspoon favorite seasoning blend (optional)
1/2 to 2/3 cup cooked ground turkey, or deli meat, cubed ham, etc.(whatever you have on hand)
1/2 cup grated cheddar cheese
2/3 to 1 cup chopped baby spinach, arugula, or kale leaves
Spray muffin tin with cooking spray, and preheat oven to 350 degrees.
Add the salt, pepper, seasoning blend, turkey, and spinach to the whisked eggs and milk in bowl.
Using a 1/4 cup measure, distribute the mixture evenly among the muffin cavities.
Top with a generous pinch of grated cheddar.
Bake for 20 minutes, or until puffed and golden brown on top.
Cool muffins in tin for several minutes before attempting to remove. Loosen edges with butter knife, if needed, to make removal easier.
These reheat well, so make sure to refrigerate any leftovers!
