Big beefy dinner salad by Mama Steph

If you are trying to eat lighter in the new year, this salad can help you meet your nutritional goals. It includes lean beef and a bit of cheddar for protein, oranges and tomatoes for flavor and a punch of vitamin C, pecans for healthy fat and crunch, all atop a delicious spring mix of greens that offer your body nutrients like iron and vitamin K.

A homemade creamy balsamic vinaigrette tops it all off perfectly.

Big beefy dinner salad by Mama Steph


5.5 ounce container of mixed salad greens (spinach, arugula, etc.)
1 cup of cherry tomatoes, halved
1/2 cup shredded sharp cheddar
2/3 cup small canned mandarin orange slices 
1/2 cup chopped pecans
6 ounces pre-cooked beef fajita meat (like John Soules)


Place the greens, tomatoes cheese, oranges, pecans and meat in large salad bowl, and toss well. 

Make the dressing:

Creamy balsamic vinaigrette


1 tablespoon plain Greek yogurt
1 tablespoon balsamic vinegar
3 tablespoons olive oil
1/2 teaspoon crushed red pepper flakes (adds heat; increase or decrease as you like)
1/2 teaspoon minced garlic or garlic paste

Combine all ingredients in a jar, close lid, and then shake well until creamy and well combined.
Pour all of the dressing over the salad, then toss well to completely distribute the dressing over the salad.

Makes about three generous salad portions.
