Cranberry bread pudding with caramel sauce

This decadent dessert is a warm bowl of caramel-topped happiness! If you're not a fan of cranberries, feel free to use other berries, like dried cherries or even raisins. It would be good with pecans, as well, if you're not a fan or walnuts, or omit the nuts altogether. 

Whatever you prefer to add, you'll be happy you did, because this stuff is decadent and delicious! Enjoy! 
 

Cranberry Bread Pudding with brown sugar-vanilla sauce 

18 ounces unseasoned bread cubes (You can make your own with a loaf of French bread)
2 1/2 cups milk
1/2 cup brown sugar
1 tsp cinnamon
3/4 tsp nutmeg
3 eggs
1 cup cream
3/4 cup dried cranberries
½ cup walnuts (optional)

Caramel Sauce

1/2 cup sugar
1/2 cup brown sugar
1/2 cup whipping cream
1/2 cup butter
1 1/2 tsp vanilla

Preheat oven to 350 degrees.
Spray a 9x9 baking dish with cooking spray, or grease with butter. 
Combine bread and milk in the baking dish. Set aside.
Combine in a bowl brown sugar, cinnamon, nutmeg, cream, vanilla and eggs. Blend. Stir in berries and nuts.
Add egg mixture to bread, and toss gently. 
Bake for 40-50 minutes or until set in the center. 

For the sauce:

Place all ingredients in a saucepan over medium heat. Stir continually until it comes to a boil, allow to boil for a minute, then remove from heat. Pour over either the whole bread pudding, or use over individual servings.
