Here's another holiday treat that's as pretty to look at as it is delicious!
Mama Steph's snowdrift ginger bark
2 bags white chocolate chips (3 1/2 to 4 cups total)
Crushed gingersnap cookies
Line a cookie sheet with parchment paper.
In a medium-sized mixing bowl, place white chocolate chips, and microwave in 30 second increments, stirring after each 30 seconds. Usually takes two and sometimes a third 30 second whirl to get it melted.
Stir until the melted chips are completely smooth. Then, pour it onto the center of the parchment paper. Use an offset spatula to smooth the chocolate evenly over the paper. Immediately sprinkle the gingersnap pieces and chopped dates, if using, over the chocolate, making sure to cover it evenly.
Allow to harden, refrigerating if time is of the essence. Then break the pieces up however you like, whether in freeform shards or by using a knife to cut into squares.
