Crock-pot chicken-tortilla soup by Buttermilk's Canton

(KLTV/KTRE) - Chef Ben Carter, owner of Buttermilk's Canton, joined us to share a recipe that you'll want to hold on to and use again and again over the next few months as the weather cools down.

Chicken Tortilla Soup (Crock pot style) 

1 pound Shredded Chicken (Rotisserie)
1 can whole stewed tomatoes, mashed
1 can enchilada sauce
1 med onion
1 can green diced chilies
2 cloves garlic
1 cups water
2 cans chicken broth
1 tsp cumin
1 tsp salt
¼ tsp black pepper
1 tbsp. chopped cilantro
1 can corn, drained
1 zucchini diced
1 can black beans
Sour cream and Shredded cheese to top off

Combine all ingredients into a crock pot and set on low for 3-4 hours
Spoon in bowls and warm your soul.
