Slow-cooker sausage-lentil stew by Mama Steph

Many people equate fall cooking with slow-cookers, or crock pots, as some call them. The recipes are warm, comforting and delicious, and even better, are full of flavor! Check out this one that is deceptively easy and delicious!

Slow-cooker sausage-lentil stew
Serves: 6 to 8

Ingredients:

1 12 to 16 ounce link turkey sausage, any flavor, sliced into rounds
1 cup carrot slices that have been cut into 1/2 thin rounds (about 2 medium-sized carrots)
1 cup celery slices (about one large stalk)
1 medium white or yellow onion, chopped
1 cup dried lentils (any color)
32 ounces chicken broth
28 ounce can diced tomatoes
1/2 to 1 teaspoon dried red pepper flakes
1/2 teaspoon dried thyme
salt (if needed, at end of cooking)

Method:

1. After slicing and chopping sausage and all vegetables, add them to slow cooker.
2. Sprinkle thyme and red pepper flakes over the vegetable mixture.
3. Pour in tomatoes, lentils, and chicken broth. Stir.
4. Cover the slow cooker with lid, and cook stew on low for six to eight hours. 

At the end of cooking, you may taste broth and find you do not need to add salt, as the sausage you use may flavor the broth enough for your taste. If needed, add 1/2 teaspoon salt at a time, stir in and taste again, being careful not to over salt and ruin your delicious stew.
