Just in time for tailgating, here's a fun recipe for a creamy cheeseburger soup with dill havarti! It's easy to make, too!
Cheeseburger soup with dill havarti by Mama Steph
4 tablespoons butter
1 cup plain flour
3 cups chicken stock
1/4 cup to 1/3 cup chopped dill pickles
1/2 cup dill pickle juice
3 ounces dill havarti cheese (or plain havarti with 1/2 teaspoon dried dill added)
1/2 pound ground beef, browned
1/2 cup diced onion
1/2 cup heavy cream
1. Add butter to stock pot or Dutch oven over medium heat. Add chopped onion, and cook, stirring occasionally, until translucent. Add the flour to make a roux, and allow it to become light golden brown.
2. Add stock and pickle juice to the pot, and whisk in, stirring until smooth. Add beef, and set heat to low. Add pickles, then cheese, and stir until all ingredients are combined and cheese has melted.
3. Add the cream to the pot, and whisk in. Allow to warm for a few more minutes, then add salt and pepper to taste. Serve topped with toasted bread crumbs, if desired.
