(KLTV/KTRE) - 2 tablespoons extra-virgin olive oil
6 boneless, skinless chicken thighs, or four breasts
2 cloves garlic, minced
1 shallot, chopped, or one small white onion, chopped
4 large peaches, sliced
1/4 cup balsamic vinegar
1/3 cup torn fresh basil
salt and pepper, to taste
1. Heat oil in a large skillet over medium heat. Add chicken, and season it with salt, pepper, and garlic powder. Cook until both sides are golden brown and juices run clear, about 3 minutes per side. Remove chicken to a plate.
2. Add garlic and shallot or onion to the pan, and saute for about two minutes. Add the sliced peaches, and cook several minutes, until softened. Pour in the balsamic vinegar and gently simmer for 2-3 minutes. Stir in the basil, and add the chicken back to pan.
3. Serve on a plate alongside asparagus or seasoned. green beans. Enjoy!
