Rodents, Roaches In Several Restaurant Kitchens

Joe's Italian Grill at 2105 E. Fifth in Tyler was inspected March 31.

Pans of lasagna cooked previous night were at 62-67F. Should have been cooled to 41F or below. Shrimp at 57-60F, chicken at 81F. Should be 41F or below. Food products thrown out.

Canned products were stored outside building. Inside, raw chicken stored above lasagna, pasta, and produce. No water at dish room handsink. No hot water in kitchen. No soap or towels at sinks in kitchen or dish room.

And, many rodent droppings were found in the storage room.  Also, the dish machine was not sanitizing. That was corrected at time of inspection. Grease trap was overflowing, and running down the parking lot.

Total demerits: 35.

On a recheck: April 13, some products in cooler tested above 41F. Rodent bait in storage room needed to be dispensed using contained bait station.

Total demerits: 15. No further recheck ordered.

Los Charles at 1510 E. Gentry in Tyler was inspected March 29.  Shrimp and ground beef at 49-50F, should be 41F or colder. Beef and chicken at 85-97F, should be 140F or hotter. Dish washer handled dirty equipment, then clean, without washing hands. Raw beef and fish stored above produce. More than 100 rodent droppings were found in a storage area.

Total demerits: 29.

On a recheck April 13, some meat products were improperly stored.

Total demerits: 10. No further recheck ordered.

Napoli's Italian at 713 WSW Loop 323 in Tyler was inspected April 12.  Heavy cream and sauces at 44F, should be 41F or below. Chicken at 96F, should be 140F or hotter. Toxic item improperly stored. Dish machine not sanitizing properly.

Total demerits: 20.

On a recheck April 13, a hand sink needed cleaning.

Total demerits: 3.  No further recheck ordered.

Chick-Fil-A at 5716 S. Broadway in Tyler.  Chicken in cooler at 48-51F, should be 41F or below. Cooked chicken at 120-135F, should be 140F or hotter. More than 200 lbs. of chicken was thrown out.

Employee seen wiping gloved hands on towel after handling raw chicken, then wiping bare hands on the same towel. Employee was made to rewash hands.

Roaches were found on prep table and on a shelf.

Dish machine was not sanitizing. Problem corrected.

Total demerits: 20.

On a recheck March 28, an adult female roach with egg casing was seen crawling on a wall. The dish machine was not sanitizing properly, and was again corrected at time of inspection.

Total demerits: 10. No further recheck ordered.

Star Donuts at 1611 S. Broadway in Tyler. Pigs-in-blanket at 117F, should be 140F or hotter. Eggs were at 75-79F.  They should be 41F or below. Products thrown out. Soap and towels needed at handsink.

Total demerits: 17.

On a recheck March 28, all problems were corrected. Total demerits: 0

Texas Roadhouse at 2101 ESE Loop 323 in Tyler was inspected April 5.  Hot dogs and wings in a reach-in cooler were at 64-66F, should be 41F or below. Handsink was not accessible in produce prep area, which was corrected on sight.

No soap or paper towels at bar handsink. No paper towels at back handsink.

Two roaches found near dish machine. Can of bug spray found at bar.

Total demerits: 17.

On a recheck April 14, potato salad in cooler had been stored more than seven days. Four pounds was thrown out. Beans in cooler were not dated.

Total demerits: 8. No further recheck ordered.
