If you have trouble getting someone in your house to eat their veggies, try putting them in a creamy, bacon-y pasta meal. It's so delicious that they're sure to let a few vegetables slip in!
Mama Steph's 'Eat Your Veggies' bowtie pasta
Two cups more or less, frozen vegetables (mixed, or peas, etc...I used a 12 ounce bag)
4 slices of bacon, fried and crumbled
1/3 to 1/2 block of reduced fat cream cheese
1/2 cup chopped onion
8 ounces bowtie pasta (mini bowties, if available), cooked and 1/2 cup cooking water reserved
1 cup vegetable or chicken stock
1. In a cold skillet with deep sides, begin cooking bacon, turning until both sides are nicely golden brown. Drain cooked bacon on paper towels. Reserve the rendered bacon fat.
2. Add the onion and frozen vegetables to the pan. Saute for a couple of minutes, then add 1 cup of chicken or vegetable stock.Bring to a simmer, and stir for several minutes, allowing vegetables to become tender.
3. Add the cream cheese and crumbled bacon to the pan, stirring until cheese is melted, then add the pasta and reserved pasta water. Stir until well-combined.
Makes 4-6 servings, depending upon size.
