This four-ingredient no-bake frozen lime dessert is perfect for any occasion.
2 cans evaporated milk
2 cans condensed milk
6 ounces lime juice
Cover the bottom of an 8x8 or 9x9-inch square baking dish with a generous layer of cookies, overlapping to cover bottom of dish well.
Pour all milk into a medium sized mixing bowl, and whisk together well.
Add lime juice 1/4 cup at a time, whisking after each addition. You'll see the mixture begin to thicken as the acid does its work.
Allow mixture to sit for a couple of minutes, then whisk a bit more. It should be noticeably thickened at this point.
Pour 1/3 of lime mixture over cookie layer, spreading to evenly distribute.
Make another layer of cookies, then top with another third of the lime mixture.
Add one more layer of cookies, then top with the final third of the lime mixture.
Crumble a few extra cookies to make a topping to sprinkle over the top lightly. Cover and freeze for several hours before serving.
