Pork shoulder roast with Dr. Pepper barbecue sauce by Grub Burger Bar
Pork Shoulder roast:
4 pound pork shoulder roast
1 large yellow onion, chopped
fresh garlic cloves (five or six)
3 oz cilantro
12 oz pineapple juice
1 1/2 tsps each cayenne powder and chile powder
1 TBS salt
1 bay leaf
Sear the roast in a large skillet over medium high heat, browning on each side.
Place seared roast in a baking pan with deep (four to six-inch) sides
Sprinkle all the other ingredients over the meat in the pan. Pour water into the pan, several inches deep, and then cover pan tightly with foil.
Bake at 300 for three hours.
Grub's Dr. Pepper Barbecue Sauce
3 cups good quality ketchup
1/4 cup Worcestershire sauce
2 TBS liquid smoke
1/4 cup Dr. Pepper
1 tsp black pepper
1 tsp garlic powder
1/2 tsp cayenne pepper
1/4 cup tomato paste (for thickening and flavor)
2 TBS Dijon mustard
Combine all ingredients in a large saucepan, and simmer until thickened, stirring very frequently so that the sauce doesn't scorch on the bottom of the pan.
