EAST TEXAS (KLTV) - Here's a delicious recipe for a Chicken-taco casserole requiring only a few ingredients. You can have dinner on the table in about 40 minutes, and that's including 30 minutes bake time. Just make sure to prep a few things on a day off (like pre-cooking pasta and storing in a Ziploc bag in the fridge...make sure to coat in a bit of olive oil to keep the pasta from sticking together.)
Mama Steph's chicken-taco pasta casserole
2 cups chopped Cooked chicken
2 medium sized bell peppers, chopped
1 medium onion, chopped
6 ounces penne pasta, cooked according to package directions
1 packet of taco seasonings or 1 package Frontera Grill taco sauce
1 cup heavy cream (or fat-free half & half for less fat)
1 cup Colby-jack shredded cheese
1. In a large skillet with deep sides, Sauté vegetables in a tablespoon of olive oil until tender.
2. Add cooked chicken, taco seasoning, and pasta. Stir to coat everything with seasoning.
3. Add cream, stirring in well.
4. Top with cheese and place in 350-degree oven for 30 minutes or until cheese is melted and center is hot.
