In The Kitchen: "What A Wonderful Cheesecake"


24 ounce Cream Cheese (room temperature)
1-1/2 cups Sugar
1 Tbsp. grated lemon zest
2 tsp. Vanilla
5 Eggs, separated
1/4 cup Sour Cream

2 cups Graham Crackers Crumbs
3 Tbsp. Sugar
Pinch of Cinnamon (optional)
6 Tbsp. melted butter

Other Items:

(1) 9 inch Springform pan
Shortening (for pan)


1.Preheat oven to 350 degrees.
2.Mix graham cracker crumbs, sugar (cinnamon) and melted butter.
3.Pour into greases springform pan.
4.Use fingers to gently press crumbs onto bottom of pan.
5.Cream sugar and sour cream together until very smooth.
6.Add lemon zest and vanilla: mix one minute.
7.Add sour cream. Add 5 egg yolks; one at a time.
8. In a separate bowl , whisk egg whites until soft peaks form.
9. Fold egg whites into cream cheese mixture.
10.Bake 1 hour and 15 minutes.
11.Cheesecake should be firm yet jiggle in center slightly.
12. Turn off oven (DO NOT OPEN OVEN)
13. Cool 45 minutes inside closed oven.
14.Remove from oven.
15.Cool to room temperature; 1 hour.
16.Refrigerate at least 6 hours before serving.
