This recipe really couldn't be much easier to prepare. Grab some chicken, (thighs or breasts), some small potatoes, and other vegetables, and toss them in the slow cooker. Make a sauce using ingredients you probably already have on hand. That's it! Enjoy this meal that is great in summer when you don't want to turn on your hot oven. 

Slow cooker zesty honey-glazed chicken and vegetables:
(Serves 4-5)


6-8 bone-in chicken thighs

12 oz bag frozen whole green beans

12 oz baby carrots

1 pound raw baby red potatoes, halved
 

Place all ingredients in slow cooker, then make the sauce:

1/2 cup honey

1/4 cup ketchup

1/2 cup low sodium teriyaki sauce

2 cloves garlic, minced

1/4 tsp dried oregano

1/4 each of red pepper flakes and ground black pepper (use more pepper flakes if you like heat, as I do. I use a full teaspoon)
 

Whisk ingredients together and pour over chicken that you've sprinkled with salt and pepper, and veggies. I also sprinkle the potatoes and beans with a bit of salt.

Cook in slow cooker on low for 6- 8 hours or until chicken is completely done. (no pinkness in meat or juices. Test with thermometer if you have any doubt.)
