In The Kitchen: Stamp's Inside-Out Tacos & Stamp's Thai Wraps


Lettuce Jammer Leaves
2 Corn Tortillas (julienned & baked crisp)
4 limes (halved)
1/2 Bunch of fresh cilantro
8 oz. Shredded cheddar
1/2 c. Plain nonfat yogurt or lite sour cream
1 c. Pico de gallo, fresh salsa or Picante sauce
1 lb. Lean ground beef, cooked & drained of fat
1 Medium onion, minced
1 c. Diced tomato
1 Tsp. Olive oil
2 Cloves garlic, minced
1/2 Fresh ground cumin


1 tsp. Chili powder
1 tsp. paprika
Salt to taste


1.In a large skillet, over medium high heat, add the oil and onion and cool until tender.
2.Add garlic, spices and salt to taste.
3.Add diced tomato and ground beef, heat through and reserve.
4.Place Jammers on a platter.
5.Put 2 oz. of ground meat mixture inside Jammer and squeeze some lime over the meat.
6.Top with julienne of tortilla.
7.On top, dollop of plain yogurt or lite sour cream, 1 Tbsp. of Pico de gallo or Picante sauce
8. Sprinkle cheddar and garnish with cilantro leaves.

Stamp's Thai Wraps


1 lb. of ground turkey meat cooked and drained of fat
2 Tbs. peanut or vegetable oil
2 Tbs. of fresh grated ginger
1 Tbs. sugar
2 Tbs. chopped green onion
1 Tbs. fresh lime juice
1 Tbs. chopped Serano pepper
2 Tbs. of roasted peanuts
2 Tbs. Worcestershire Sauce
Salt to taste

1/2 bunch coarsely chopped cilantro leaves
Cracked peanuts
Mint leaves
Tomato slices


1.In large saute' pan, over medium high heat, add oil and peanut and toast.
2.Add chopped green onion, grated ginger, garlic, sugar, lime juice and Serano pepper.
3.Add Worcestershire sauce and turkey meat.
4.Mix thoroughly.
5. Remove from heat and let cool some.
6.Fill jammer with meat mixture and top with garnish.
