In The Kitchen: La Waffalata's Rice Pudding With Raisin-Rum Sauce

Ingredients

3.4 oz. box instant Vanilla Pudding
2 cups of Milk
1/8 teaspoon Cinnamon
Pinch of Nutmeg
1/2 cup cooked White Rice
1/2 cup of Milk

Method:
1.Pour 2 cups cold milk into instant pudding.
2.Add cinnamon and nutmeg.
3.Whisk for 2 minutes set aside for it to chill.
4.Prepare white rice as per instructions.
5.Allow 1/2 cup of rice to cool.
6.Stir in 1/2 cup of milk.
7.Pour into parfait glasses and sprinkle with cinnamon-sugar.
8.Top with Raisin-Rum


Rum-Raisin Sauce

Ingredients:

1/4 cup Honey
2 Tablespoons Butter
1 cup of Gold Raisins
2 tablespoons fresh lemon juice
1/2 cup Sugar
1 tablespoon Cornstarch
1 cup Water
1 capful Rum Extract

Method:
1.Pour first four ingredients in to small pot.
2.Melt butter on low.
3.Mix sugar and cornstarch.
4.Add to melted butter mixture .
5.Bring to a boil, add 1 cup of water.
6.Simmer 5 minutes.
7.Serve over Rice Pudding
