Here's an easy way to make a quick, protein-packed dinner that your family will love.
Savory sausage-stuffed sweet potatoes
2 sweet potatoes, washed and baked until soft
1 pound sausage
1/2 medium onion, chopped
1 cup shredded cheddar cheese
2 cups raw kale
Saute the sausage and onion together until there is no pink left in the meat. Add the kale, and saute until wilted. Add the cheese, and allow to melt as you stir in.
Split the potatoes open, and use a fork to flake the flesh and make a space for filling. Fill each potato with the filling, and serve hot, sprinkled with a bit more cheddar.
