Banana Trifle from Jack Ryan's Steak and Chophouse

Jack Ryan's Steak and Chophouse is located at 119 Longview Street in Kilgore; today, one of the owners, Wes Ebey, will share their luscious dessert that never fails to please: Banana Trifle

Banana Trifle:

Banana Pudding:

¾ cup granulated sugar

3 tbls cornstarch

¼ teaspoon kosher salt

2 large eggs

1 large egg yolk

2 cups whole milk

3 tbls unsalted butter

½ teaspoon vanilla extract

4 ozs banana liqueur

1 tbls lemon juice

1 cup heavy whipping cream


Combine ¾ cup of sugar, the cornstarch and salt in a 3 quart saucier. Add the eggs and egg yolk and whisk to combine. Add the milk and whisk until well combined. Cook over medium-low heat, stirring constantly until the mixture reaches 172 to 180 degrees F, about 5-10 minutes and the mixture will start to thicken. Remove from heat and whisk in the butter then add vanilla. Cover the pudding place and refrigerate for about two hours. Whip the cream until thick.

Whipped Cream

Make layers of each to fill a cup or bowl whichever is best for you and garnish with a brulled banana. Top off with fresh mint. Enjoy!!!
