(KLTV) - This strawberry upside down cake is super-easy to make and really delicious. You might want to try it for Easter or Mother's Day brunch, since it's so pretty and also so easy to make.

Strawberry Upside Down Cake
(adapted from's recipe)


1 1/3 cups sliced fresh strawberries
2 TBS butter 
4 TBS brown sugar

2 eggs
3/4 cup granulated sugar
1/4 tsp salt
1 stick butter, melted
1/2 cup Greek yogurt or sour cream
1 tsp vanilla extract
1/4 tsp almond extract
1 cup plain flour
1 1/2 tsp baking powder


1. Preheat oven to 350 degrees. Grease or spray 9" round cake pan or cast iron skillet.

2. Place 2 TBS butter and brown sugar in saucepan, and melt together over low heat. Do not boil, just dissolve sugar into butter and remove from heat. Pour into greased pan, spreading across bottom as best you can. (It will be thick, and it's ok to have gaps.)

3. Arrange the strawberry slices across the pan on top of the brown sugar mixture, in a single layer.

4. In the bowl of a mixer (or in a mixing bowl, if you are whisking by hand) mix together the eggs, salt and sugar, whisking until creamy and lightened in color. Add melted butter, yogurt, vanilla and almond.

5. Combine flour and baking powder in a small bowl, then add to the wet mixture. Blend or stir until well incorporated and no longer lumpy. Do not overmix.

6. Pour batter over strawberry layer, and smooth across the pan evenly. Bake for 35 minutes, checking with toothpick to make sure no batter is still moist in center. (time may vary by oven.)

7. Cool for ten minutes, then run a butter knife around edges of pan. Invert cake onto serving plate or cake stand.

This cake is delicious whether warm or cool, and is extra-special when topped with homemade whipped cream or a scoop of vanilla ice cream!
