Perfect for brunch or bake it in a square dish, cut in small squares, and serve as an appetizer. It's so easy and it only utilizes two eggs. The secret is mayonnaise. It always bakes to perfection!"
HOUSTON MEAT AND CHEESE QUICHE
1/2 pound lean ground beef 3/4 cup grated cheddar
1/2 cup mayonnaise 3/4 cup grated swiss
1/2 cup milk 1/3 cup sliced green onions
2 eggs Salt and pepper to taste
2 tablespoons flour 1 (9") unbaked pie shell
Brown meat,set aside. Blend mayonnaise,milk,eggs, and flour until smooth. Stir in meat, cheese, onions, salt and pepper. Turn mixture into unbaked pie shell. Bake at 350 for 35 to 40 minutes.
Serve with a garnish of sour cream and a small sprinkle of some of your green onion tops, sliced thin.
