Chef Renée Schuler's recipe for White Chicken Chili is a great dish for easy entertaining!
Recipe for White Chicken Chili:
15 ounce can cannellini beans, drained and rinsed
15 ounce can black beans, drained and rinsed
flour, all purpose
chicken broth or stock
half and half
4oz cans green chilies, chopped
diced or pulled cooked chicken (about 3 cups)
Yield: serves 4-6
Serve with some or all of the following toppings: shredded Cheddar or Monterey Jack cheese, diced tomatoes, pickled jalapenos, bottled hot sauce, chopped cilantro and green onions.
Round out the meal with tortilla chips and salsa, a green salad and dessert.
