Grilled lemon pound cake with warm peach compote

Here's an easy dessert that I think you'll love to make on a night when you're tired but want something delicious for yourself and your family.

Grilled lemon pound cake with warm peach compote

1 lemon (or your favorite flavor) pound cake from bakery or freezer

1 large can sliced peaches (drained, reserving 1/4 cup of juice)

1/4 cup brown sugar

1/2 tsp cinnamon

1/4 tsp ground ginger

1/2 cup dried blueberries, soaked in warm water or peach juice for 20 minutes

One stick of butter, melted

Method:

Slice pound cake into one inch slices.

Brush slices with butter, and place on warm grill pan for a couple of minutes on each side.

In a sauce pan, mix drained peaches and reserved juice with the blueberries, brown sugar and spices.

Simmer on medium -high heat for five to eight minutes, until everything looks combined and syrup-y.

Place one slice of pound cake on a plate, and drizzle with the peach compote. Serve while warm.
